GLUTEN FREE PENNE RIGATE WITH MUSSELS & CLAMS IN TOMATO AND RED WINE SAUCE
Fresh seafood from a trusted store is your best bet in this case. You can get very sick easily with this type of food. Assuming we are cooking for 2 persons I would get
1 Lb. of Fresh water Mussels.
1 Lb. of Fresh Clams
1 Can of Organic Tomatoes or Tomatoes from San Marzano, Italy is ideal.
1 Garlic clove
Fresh Parsley chopped.
3 Shallots ( or 1 white Onion )
1 Stalk of Leaks
1 Lb. GF. Penne Rigate
1 Cup of Red wine
Heat up a cooking pot with 3/4 water and 1 tea spoon of sea salt. On a pan put 6 tea spoons of Extra Virgen Olive Oil and let it heat. Then add 5 finely sliced garlic cloves and add the chopped Shallots and the Leaks. Then add the Tomatoes and add Sea salt and fresh black Pepper at your taste. 1 pinch of chill peppers to give it a Kick and 1/2 cup of red wine.
Cook it for 20 - 30 minutes at high heat and once the tomato sauce is near to be done add the clams and Mussels to the pot and finish to cook everything together for another 10 minutes at medium heat and add the chopped parsley to the pot.
Put the GF. Penne Rigate in water to cook and once they rise and float they are " Al Dente " and if you let them float for 1 minute they will be more soft.
Drain the pasta and add it to the sauce and mix it. Now your food creation is ready to serve. Simple recipe.
