Stuffed Eggplant with Ricotta cheese is an authentic classic in Italian families like mine. This is a very easy dish to make and have that " home cooking taste " ( even if your family is not Italian ) In the harvest season, I personally use the eggplants I grow in my back yard, but if you don't have a back yard or you happen to read this article out of the season..... go to the supermarket and get 2 or 3 Eggplants ( Organic is your best option ).
