GLUTEN-FREE & VEGAN CAULIFLOWER PASTA
A plant-based diet is just as it sounds. It is a diet based mostly on foods made from plants including vegetables, whole grains, nuts, legumes and fruits. It has few or no animal products.
And here is where we would like to point out that there are differences between a vegetarian diet, a vegan diet, and a plant-based diet. Generally speaking, vegetarians exclude all meat, and usually seafood, from their diet but they typically do consume dairy products. Those who chose to follow a vegan diet follow a plan of eating foods with NO animal products at all, including dairy and even honey. Those following a plant-based diet generally follow an eating plan that includes whole foods or ones that are minimally processed, and MOSTLY plant-based, but there may be occasions when they allow meat, poultry, or seafood in LIMITED amounts.
Again, these are general guidelines. Lifestyle eating plans are very specific to individuals.
NEW TRENDS IN PLANT-BASED EATING
You may have noticed that there is a new trend in plant-based and GLUTEN-FREE EATING - using pureed or shredded cauliflower as a replacement for regular flours or rice and to create pizza crusts and pastas. If done correctly, this can be a tasty alternative to heavier flour-based meals while still maintaining the consistency of the traditional food AND making it more nutritious and low in calories.
We have seen it in stores already “riced” so that it is ready to be made used for pizzas. We have even seen crackers and pretzels made from cauliflower.
Cauliflower is considered a cruciferous vegetable. Other vegetables in this family include cabbage, bok choy, broccoli, and brussels sprouts. But before you turn up your nose to what you typically think of as a stinky bunch of vegetables, read on!
Cauliflower is quite the amazing vegetable. It is low in calories at about twenty-five calories per cup. It is high in fiber to keep your digestive system running smoothly. It contains a significant amount of antioxidants which have been shown to reduce inflammation and to protect your cells from free radicals, the kind that can cause damage to your body. It’s low in saturated fat and a good source of many nutrients and vitamins including Vitamin C and Vitamin K.

We make this tasty alternative to traditional pasta with only the freshest ingredients. We start with orange cauliflower (though any of the caulflowers would work) and add lentil and garbanzo-bean flours to it.
